Hey hey – ho ho! How is everybody this Wednesday? Can you believe this is my last week of summer vacation before I head back to work on Monday 😦 This summer went waaaaay too fast, but I tried to make the most of it!Peas and Crayons

Let’s get it rollin’ with a little What I Ate Wednesday hosted by Jenn at Peas and Crayons!

Breakfast: 1 whole egg + 1 egg white scrambled with onion, spinach, goat cheese (and a little hot sauce…obvi)image (6)

Lunch: salad: spinach, sweet potato, pickles, tomatoes, edamame, orange pepper, avocado w/creamy poppyseed dressingimage (8)

Dinner: grilled lemon pepper trout, tri-color cous cous w/ kale & sweet potato, grilled asparagusimage (4)

Workouts:

  • sunday – hiking + rock climbing
  • monday – 3 mile run + abs
  • tuesday – 18 mile bike + abs
  • wednesday – swim + yoga
  • thursday – 3 mile run + 12 mile bike
  • friday – yoga
  • saturday – 8 mile run + rock climbing

  3. I can’t believe the school year is almost here… I start teaching a summer class next week, and go back full time on the 18th. Where did summer go??

    p.s. Just made a variation of your quiche πŸ˜‰ I loved the sweet potato crust idea!! I used nutritional yeast instead of cheese and put in chopped peppers, onions, and garlic with cumin, chili powder, and a little red pepper. Planning to top it with salsa and guac for a mexi-style dinner. Thanks for the idea!!
