Quiche Me!

I haven’t made a quiche in quite a while, so I thought I would throw one together the other night for a light protein packed dinner! Here’s a quick and easy recipe!

I started by making a sweet potato crust. Line the pie pan with slices of sweet potato. Bake @ 400 for about 15 minutes. Leave oven warm.IMG_2778[1]

Mix 4 whole eggs + 4 egg whites. Then add blue cheese, sauteed spinach, and mushrooms (just eyeball the amounts 🙂 )IMG_2780[1]

Pour it all over the warm sweet potato crust and layer roma tomato slices around the outside.IMG_2781[1]

Bake @ 350 for 40 minutes (oven time may vary, so keep an eye on it….high altitude tends to speed things up here!IMG_2784[1]

And in the end you have a delicious dinner, brunch, lunch…whatever!
