Happy Monday! How was everyone’s fourth of July weekend?
Joe and I headed toward Rocky Mountain National Park on Thursday night and found a secret campsite to call home for the weekend.
Friday, Saturday, and Sunday were spent hiking and climbing. We found some epic rocks to explore and had a great time playing for hours! Plenty of good dinners were cooked over the fire.
We had chicken hot dogs on the fourth with baked beans and asparagus.
And Saturday we had an appetizer of wine and cheese with apples.
Dinner was rainbow trout with quinoa kale salad….sooo good!
After morning climbing on Sunday, we packed up camp and headed back to Denver. We did stop for lunch at Oscar Blues Brewery. Chicken sandwich with salsa and guacamole for me!
It was so nice to get away for the long weekend and we are probably going to go back to the same spot next weekend to do it all over again 🙂

It was a Christmas present from my mom and so so awesome. I could live in that thing. haha
What a fun weekend. I miss rock climbing- such a fun sport.
You should get back into it! Seriously a full body workout…and yoga helps a ton, so you would be awesome 🙂

Thanks! Our weekdays are pretty lame (and because of work, Joe and I don’t really see much of each other), so we try to pack a lot in on the weekends.
You guys camp like we do: bring good food. Camping doesn’t mean you have to sacrifice an awesome meal for gross camping food. I think sometimes we even buy BETTER food when we go camping. 😉
I totally agree! I put way more planning into our camping meals than I do the normal daily meals – haha.
There’s gotta be some great camping where you are in Aus, right?
