Friday Food Fun: asparagus and red skin salad

We had another summery dinner last night. This time it was vegan sausage and veggie kabobs with cous cous and deviled eggs!IMG_0053[1] IMG_0051[1]

I tried something new with the deviled eggs and made a couple of them with a little bit of blue cheese and relish…it was a tasty addition to the tradition devil πŸ™‚

Now as promised, the recipe for the delicious salad from Wednesday nights dinner!Β IMG_0045[1]

ingredients:

  • 6-8 red skinned potatoes
  • 1 bunch of asparagus
  • 4 Tblsp. white balsamic vinegarette salad dressing
  • 1 Tblsp. dijon mustard
  • 1 Tblsp. dill (fresh or dried)
  • salt & pepper to taste
  1. chop and steam the asparagus (just briefly so they still have a bite πŸ™‚ )
  2. chop and boil the potatoes – drain & combine with asparagus
  3. refrigerate until cool
  4. whisk together dressing and dijon
  5. pour over veggie mixture and herbs
  6. mix until everything is coated
  7. refrigerate for a couple hours – enjoy!!

  4. That skewer looks so tasty! I doubt my boyfriend would be about vegan sausage, but I might try! That salad looks SO good and if I have time this weekend I’m definitely trying to recreate it. Asparagus is my favorite.

  5. I’ve been loving deviled eggs lately! Just with a little dijon mustard, mashed avocado, sea salt and pepper. so good!
