B-day weekend recap

How was everyone’s weekend? We had a really fun packed one here!

Joe was able to get home from work a little early on Friday and we headed to a rooftop restaurant for a causal celebratory dinner. IMG_0007IMG_0006


We were up early on Saturday and hit the road to head to Pearl Lake State Park. It was over a 3 hour drive, and we wanted to get there in time to do some biking/exploring. About 20 miles before reaching our destination, we hit Steamboat Springs, so we stopped to walk around and have an early lunch.

Then it was back on the road for the final push to Pearl Lake. When we arrived we got started setting up camp!                                        DSCN0229 DSCN0234 DSCN0230Then it was time to get out on the bikes and do some exploring! We biked around the lake area for a couple hours checking out the beautiful scenery and wildlife- BALD EAGLES 🙂                         IMG_0011IMG_0015 DSCN0313

After biking, we had a beer and hung around the campsite…just being weird.

Before long it was time to get the fire going…good thing I travel with a former boyscout 😉 DSCN0276 DSCN0278

As we were waiting for the fire to get roaring, we noticed a friendly little visitor approaching.DSCN0262 DSCN0264

Then, he got really friendly with our neighbors food! Don’t worry- we scared him away before he took anything 🙂                                                       DSCN0267

Like the little fox, Joe and I were hungry, so I got dinner started. I made a variation of something I use to have every summer in Maine growing up. Red skinned potatoes, brussel sprouts, and vegan sausage all combined in tin foil and cooked over the fire. DSCN0280 DSCN0283 DSCN0291 DSCN0293 DSCN0296 DSCN0299

Then it was off to bed..the sun was up early Sunday morning and so were we! We packed everything up and headed back toward Steamboat to find some trails to bike on. And, we did!IMG_0022IMG_0024

Before heading back to Denver we grabbed a late lunch at a sidewalk cafe. I ordered the house pickles as an appetizer and they gave me a whole jar to take home! Score!                                                          IMG_0025

It was a long drive back home (which I slept through much of 🙂 ) but all together it was an incredible birthday weekend! 32 is looking pretty good so far!

    • hahaha- thanks! that was actually the first time I have tried cooking brussels over a campfire and I have to say they were awesome!
      the birthday weekend was awesome- I just wish it could have lasted a whole week! 🙂

    No matter how many times you post trips like this (every weekend lol), I just can’t get over how active the two of you are, and the scenery is just breathtaking! So impressed with your cooking skills out in the wilderness!

    • It is beautiful isn’t it!?! Joe and I don’t see much of each other and rarely hang out during the week, so it’s really nice to just get away from everything 🙂
      the food turned out so good too- I was pretty impressed with myself- haha
