Breakfast: chobani + banana + coffee
Lunch: the usual salad: spinach, tomatoes, carrots, avocado, vegan chicken, pickles, Annie’s raspberry dressing (old pic, but basically looked the same)
Dinner: CHIPOTLE! (buy one get one free for teacher appreciation!)
Black bean burrito for me (steak for Joe). I ate half and made an avocado & greek yogurt mixture to put on top + added some steamed broccoli to the side.
Workouts:
- sunday – rest
- monday – legs + core
- tuesday – 4 mile run + core
- wednesday – yoga
- thursday – 4 mile run + legs + core
- friday – rest
- saturday – GOTR 5k race + 12 mile trail run

They are really good! I’ve had the cacao ones before, but this is my first time trying this flavor! They are perfect for an extra boost right before a workout 🙂
I thought of you this morning when I was making my big ol’ salad for lunch! I have a long-ish run this wknd too and I’m really looking fwd to it!

What’s vegan chicken? I haven’t had Chipotle in so long and I love it! A black bean burrito sounds delicious.
vegan chicken comes in a package (sometimes frozen) there are a couple different brands/types. This one was morningstar and came in strips. It’s actually pretty good!
Bananas and greek yogurt make for the perfect breakfast 🙂
