WIAW + Workouts #39

Yesterday was a snow day for most Denver schools, so I enjoyed a lovely day off! As many of you know, my favorite running weather is between 15 and 25 degrees and snowy so I headed out for a fabulous 8 mile run!                                                            IMG_2631[1]

Here’s a look at the yesterday’s eats. Thanks, as usual to Jenn for organizing the shin-dig. Click the image below to join in on the fun!                                       Peas and Crayons

Breakfast: 1 whole egg + 2 whites scrambled with onion, asparagus, tomato, goat cheese, hot sauce 🙂  and 1 slice toast.                                                                   IMG_2628[1]

Lunch: hummus, muenster, tomato, spinach, pickle sandwich + pretzels + avocado                                                                                                IMG_2633[1]

Dinner: maple dijon salmon over greens + red-skin mashed potatoes  IMG_2637[1]

Snacks: I don’t take pictures of all snacks- I tend to grab lots of random handfuls of things throughout the day (especially when I am not at work 😉 )

haha- I was trying to make it look like my banana had legs.

  • sunday – 5 mile trail run (this was a crazy hard route)
  • monday – REST
  • tuesday – 8 mile run
  • wednesday – hot yoga or spin
  • thursday –  5k run + hot yoga
  • friday – hot yoga
  • saturday – trail run + climbing gym

I just started a 30 day squat challenge I found on instagram, and a core challenge from Tribesports you can find HERE. So, I will be doing those in addition to everything else 🙂

Do you like to mix things up with workout challenges or do you stick to pretty much the same things?

I’m really liking the ingredients you used for your lunch sandwich! I always forget about pickles when I’m at the store.

  2. Look at you running 8 miles on your day off! That is totally something I would do too 🙂

    • haha- I get so excited when I can run in the morning- I just hate that my schedule forces me to be an evening runner now- i am usually so tired at the end of the day!

  3. I’m definitely a fan of switching up my workouts. You have a great plan of yoga and running!

  4. Everything here looks amazing, especially your breakfast!! I love incorporating veggies into my meals so early in the day. They always taste awesome with eggs, too!

  5. Oooh, I’ve done that core workout, it’s a good one! I’m not always great at snapping pics of my snacks either since I do too much snacking! I’m working at only having a two snack per day but I’m just so used to being a grazer!

  6. I still can’t believe that people are having snow! If it meant a snow day though, I’d be game 🙂 Sounds like a fun day off. I try (and fail) to do fun things with my food pictures too. I’m not sure any of them have actually ended up on my blog… Kudos to your leggy banana 😉
