quish-ish?

Can you believe I didn’t do a WIAW post yesterday? I never miss those! Unfortunately, I had a rough day on Tuesday…the pink eye was pretty much clear, but I woke up with a fever, chills, nausea…not good! Luckily I HAD to be out of work because of the pink eye…oy.

Anyway, I spent the day in bed and this is all I managed to consume all day   IMG_2494[1] IMG_2495[1]

…so my food recap wouldn’t have been very interesting. Anyway, my fever broke sometime around 2am yesterday morning and I managed to drag myself into work. By noon I was pretty much feeling back to normal!

Since I usually add my weekly workouts into my WIAW post, I thought I would put them out there today. Here’s what’s happened so far and what I still have ahead 🙂

  • sunday – REST
  • monday – 6 mile run + abs, legs, arms
  • tuesday – SICK 😦 forced rest
  • wednesday – yoga
  • thursday – 4 mile run + abs, legs, arms
  • friday – 6 mile run
  • saturday – snowboard

For dinner last night I had planned a quiche, but it turned into more of a cheesy veggie pie situation….not really sure what to call it. But it was good!            IMG_2496[1]

Ingredients:

  • kale
  • vegan chorizo
  • shredded taco cheese
  • cherry tomatoes
  • mushrooms
  • 2 whole eggs + 3 egg whites

No matter what you name it, I call it delicious!

Do you ever start with a meal idea in mind and then change it up as you go?

    • I actually make them pretty often, but this was the first one I tried adding a vegan meat product too- loved the result though- will definitely do it again 🙂
