Lucky Laces

Happy Friday everyone!!  Joe and I signed up for one at the last minute.

We will be running the 10k tomorrow morning in City Park and then enjoying the St. Patty’s Day festivities afterward. I think we have a party to go to with friends, so Saturday will be the celebration day. Sunday we will be heading to the mountains for some snowboarding, but I am sure we will squeeze in another green beer that day too 😉

I’m super excited for the race – this will be our first one in Denver and only our second race in Colorado! I am not planning to go crazy and run this really fast, but just enjoy the race and have fun!

Dinner last night was a new one, and really good! Stuffed Peppers!

Start with two green bell peppers; cut off the tops and gut them.                      IMG_2458[1]

Then fill them with a mixture of brown rice (seasoned with taco seasoning), refried beans, and vegan choritzo.


Throw them in a 350 degree oven for about 40 minutes and then melt some cheese on top…..and tada!                                                                             IMG_2463[1]

  1. How fun! I wish I were doing a St. Patrick’s Day race! It sounds like so much fun! I actually forgot it was St. Patty’s Day weekend until just yesterday. Funny because when I was in college March revolved around this day! My how things change 🙂

    • haha- funny how that happens huh? This will actually be my first ever St. Patricks race…I think I usually just get to the drinking immediately. 😉

    Those peppers look yummy! I am not a vegetarian but I love trying veg foods for the fun of it 🙂

  4. Stuffed peppers are SO good! I recently made some with lentils and veggies and they turned out really well. I love your idea to use vegan chorizo. Yum :).

  5. Those stuffed peppers look good. I didn’t realize how easy they are to make- definitely will have to give them a try!
