So a couple weeks ago, I told you all the good news about The NYC Marathon in THIS post. Well, just to update you all, I have officially made and submitted my decision with the New York Road Runners:

Now on to the recipe….I somehow go the motivation to whip something up last night and I decided to use a bunch of random stuff from the pantry and see what came out of it. Here’s what went into a big pot:
- 2 cans chili beans
- 2 cans diced tomatoes
- 1/2 onion – diced
- about 2 cups vegan ground beef
- salt & pepper
- a dash of chili powder
I just let it simmer for a while and stay warm while I cooked up a couple cups of orzo. Then I served it all together in a bowl with some fresh spinach leaves, cheddar cheese (of course!) and sirracha!
It was really good and I’m pretty impressed that I was able to make something out of a bunch of random stuff!

I would call my cooking a random concoction of foods all the time. It’s the best when you can use up all of your stuff! My favorite weird thing that turned out really well was adding salsa to my salad. I guess that’s not so weird but it was delish!
Salsa on a salad is really good! I just love salsa 🙂
Sriracha is a total MUST on chili! Yum! I like to serve mine over a bed of greens too, it wilts just enough!
