AVALANCHE!!!!!!

haha- did that get your attention? Don’t freak out- I was not swept away by an avalanche; I just got a little busy again and didn’t have a chance to check in yesterday.

Last night, Joe and I attended an avalanche clinic at Wilderness Exchange (super cool outdoor store in our neighborhood).

We both want to get into back country snowboarding, and this was kind of a first step to start getting the knowledge we need to stay safe. The next step is a full Avi 1 course, which Joe has signed up for, but I am going to wait until I have a little more funds….those courses are crazy expensive and all my money is about to go to the NYC Marathon (again!)

The class was really informative and and definitely opened up my eyes to things I would never have even thought. Can’t wait to get out there!!                       IMG_2217[1]

In FFF (Friday Food Fun) news, here is a totally random dinner I threw together last night that turned out much better than it looks (I promise!)                                                          IMG_2218[1]

Beef(less) Veggie Orzo

  • 2 cups broccoflower
  • 1/2 box of orzo
  • 1/2 package of morning star vegan ground beef
  • 1 can cream of tomato soup

cook everything, add some salt, and mix it all together! I added a little parm cheese on top and it was pretty tasty 🙂

Wish me luck in the race tomorrow!! I’m getting all “fast and flurry-ous!” haha.

    • It’s actually really good! I haven’t had real beef in about 16 years, so not sure how it compares, but my boyfriend really likes it and he’s a huge carnivore. Adds great protein and flavor to veggie meals 🙂

  3. mmm that recipe looks delish! Are you vegetarian?
    I’ve been looking for an Avi course to take – definitely a smart move before doing anything in the back country here. I’ve done a lot of winter hiking/slide skiing in the Adirondacks but I know its a whole other ball game out here and I definitely want to be safe about it!! It does suck that they are so expensive

    • I hear ya! This was put on by the CO Mountain School and AIARE which has one of the most comprehensive avi courses, but it’s crazy expensive. Joe got a really good living social deal on his through Apex Ex….you just need to be on the lookout for them. Have a fantastic weekend!

  6. That’s awesome that you guys are getting into snow activities. Snowboarding is so fun and a killer workout. Hope your run went well!

    • Yea- we are definitely loving the accessibility here. Living in NYC, we would only get up to ride a couple times each season and we’ve already been snowboarding 11 times since moving here a month and a half ago. It has definitely become my regular weekend workout. Just can’t wait to get off the resorts and into the back country 🙂
