Last post of 2012…

How was your weekend? Mine started off with two great runs on Thursday and Friday. The weather looked like this both days

But, for some odd reason I LOVE running when it’s cold and snowy, so I set out for 8 miles and ended up doing a bit more.

Then Friday I did a nice easy 5 miler in a new jacket I got for Christmas from Joe’s brother 🙂                                                                                                          IMG_2064[1]

I came home to a package at my door! It was a Christmas present from Jari!

my favorite olive oil from the Company she works for 🙂

Then I made a delicious salad concoction. Leftover lump crab from Christmas Eve, spinach, pickles, shredded cheddar, carrots, chia seeds and Annie’s Goddess dressing.             IMG_2065[1]

And sadly, I ate the last one of these…chocolate covered toffee with espresso beans! WHAT?!?!                                                                                                          IMG_2066[1] IMG_2067[1]

We got these at whole foods when my mom was here and they were fall off your chair good! 🙂 I spent the rest of the afternoon taking some of our Christmas decorations down (we kinda have a lot), but we are keeping our tree up until after the new year (tradition).

Joe and I spent Saturday snowboarding at Breckenridge. We got there before the chairs were even running, so got first tracks! woohoo! It was a beautiful day and we had such a good time!                                                                                    IMG_2070[1] IMG_2073[1] IMG_2075[1] IMG_2071[1]

After riding, we walked around the town a bit and grabbed a pint at the Breckenridge Brewery.                                                                        IMG_2078[1] IMG_2083[1]

Sunday we went on a snowshoe adventure! I had found a short route near Echo Lake I wanted to try for a semi restful day – only about 3 miles.                                                  IMG_2092[1]IMG_2088[1]

However, somehow we got a bit off track and ended up doing closer to 10 miles…a lot of which was uphill!                                                                                     IMG_2098[1] IMG_2099[1] IMG_2102[1] IMG_2100[1] IMG_2089[1] IMG_2106[1]

We had a lot of fun and ended up getting a much harder workout than expected. By the time we got back to the car we were ravenous! So, we found a place in town called Tommy Knocker and ordered some lunch. AMAZING fish tacos- and so huge!! YUM!                                                                                                      IMG_2112[1]

It was another jam packed weekend and I am exhausted!! Joe and I are still figuring out our New Years Eve plans, but I will be sure to let you all know what we end up doing!

Hope you all have a safe and happy NYE!

What are your plans for ringing in the new year?

  1. Looks like a fun weekend! So you actually like running when it’s cold out? Teach me your ways! I hate the cold brr! Happy New Year’s Eve!

If I fly to you, will you teach me how to ski… oh & make me one of those delicious leftover salads?? =)

  3. That looks like a pretty awesome adventure!! I’d love to do some snowshoeing while I’m out here – I’ve heard the maroon bells hike is beautiful, we’re going to try to ski it today. The Breckenridge Brewery right in Denver is great too – we went there on Saturday. Us right across from Coors stadium. Hope you had a great New Years!!

    • I actually haven’t been to the Breck Brewery in Denver, but am definitely going to check it out. I hope you had a great time skiing – you definitely picked a chilly week to be here in CO 🙂
