Friday Food Fun – just throw it all in a pot

You know those days when you don’t really have anything to cook for dinner, but you don’t really want to go grocery shopping? Well, that was the case the other night, so I took a look at the pantry and just pulled out some random stuff.

I decided I would turn this into some kind of soup, so I sauteed 4 cloves of garlic and about 1/2 cup of chopped onion. I cooked the orzo and then threw everything into a pot with one can of water, a few teaspoons of cumin, and S &P. Then I let it stew for about an hour while I made these!                                                            IMG_1948[1]

The recipe called for heavy cream, but I didn’t have any and that sounded a bit “heavy” anyway, so I took a chance with soy milk. You are suppose to roll the dough out and cut them into cute little triangle cones, but I didn’t have the patience, so I just globbed scoops of the batter onto a cookie sheet.             IMG_1950[1]

They look a little funky, but actually turned out really good! And, I LOVED the soup! I added a little shredded cheddar and a swirl of sirracha to garnish.           IMG_1951[1]

Soooooooo good on a cold winter night in the Rockies 🙂

Do you ever just throw random ingredients together and hope for the best because you don’t want to shop?

  2. I wish I was more creative when it comes to using what we have in the pantry. I have a hard time thinking outside the fridge. Your soup looks yummy!
