What I Ate Wednesday Healthy Holiday Recipes

Breakfast: pumpkin granola, 1/2 banana, chia seeds, 1 scoop coconut almond butter, vanilla soy milk                                                                                          IMG_1976[1]Lunch:

Dinner: salmon & asparagus quiche + baked sweet potato                 IMG_1979[1]

Snacks: grapes, string cheese, smoothie                                         IMG_1981[1] IMG_1982[1] IMG_1984[1]

Workouts:

  • sunday – rest
  • monday – 4 mile run + hot yoga
  • tuesday – spin + 5k run
  • wednesday – hot yoga + 45 min. elliptical
  • thursday – rest
  • friday – 6-7 mile run (depends on schedule with Mom)
  • saturday – snowboard

  1. I have had good and bad experiences with quiche. Is it a pain in the butt to make yourself? The smoothie looks very refreshing btw. I hope you have a nice time with your mom!! Glad you’re back at yoga too. 🙂

    • The quiches I make are actually super easy. I may have a recipe on here somewhere if you do a search. I do them crustless, so basically you just throw whatever veggies you want into a pie plate. I mix a combo of whole eggs and egg whites with a splash of milk, pour over the veggies and sprinkle in some cheese. Then it bakes for like 30-35 minutes. Viola!
