Dinner & a daredevil

Did you watch Nick Wallenda’s big Niagra Falls tightrope walk last night?

Joe and I were riveted for hours! The hour leading up to the walk was cool because they did a countdown of the top 20 daredevils and one of my personal idols, Jeb Corliss, was #1!!

While watching, I made a veggie quiche and we snacked on some edamame. Look at this siamese twin one….weird….

I made this a crust-less quiche which was a first for me.

  • 3 whole eggs + 7 egg whites
  • 1/4 cup half & half
  • salt & pepper
  • 1 whole zucchini chopped
  • 1 cup red, yellow, green peppers sauteed in pan (I used a bag of frozen tri-color peppers from Trader Joe’s)
  • shredded cheddar- I added almost a whole bag 🙂

Pour all into the pie pan and bake at 350 for 35-40 minutes.


A little sirracha on the side and this was delicious. Light and satisfying and so quick and easy to make.

It’s a beautiful day in NYC, I just got back from a short run and am getting ready to meet Joe’s family at the theater to see War Horse!
